We've been purchasing everything we can from Armel and Johanna Burbano since 2022. Every year their coffees become cleaner and more dynamic flavour characteristics. This picking of their Pink Bourbon variety, is sparkly and lively!
A little bit on how Armel and Johanna process their coffee:
Cherries were collected every three weeks. The first day’s collection is left in sealed bags for 24 hours and the second day’s picking is placed into the hopper above the depulper. The first day’s cherries are then placed on top and left for 12 hours before depulping. Once depulped, the seeds are left to dry ferment in tiled tanks for 8 hours. The third day’s collection is then depulped and added to the dry mass before being placed into sealed plastic buckets where they are fermented another 40 hours. After this, the seeds are then rinsed and left in porous bags to drain before being placed into the dryer, where they are consistenly moved over the course of 12 days. The parchment is stored in Grainpro sealed bags until it is ready to be delivered for milling.
