Dionisio Garcia Luna, along with his brothers, Sanson, and Pompilio, produce coffee in the community of San Vicente Yogondoy, in the state of Oaxaca, Mexico.

 

This region, due to it’s remoteness, is relatively untouched by colonial influence and government. Indigenous languages and communal life are still largely the norm. For example, the word Yogondoy is the Zapotec word for “River of Bees”, due to the abundance of bees, and honey production done in the area.

 

This coffee consists 100% of the variety, Pluma Hidalgo, which is the regional variant of the Typica/Pache strain. Combined with a growing altitude of 1500-1700m, the flavour notes of cacao and hazelnut, and peach fruit, are abundant in the cup.

This coffee works well as a Filter roast. Here are the methods it’s best suited to, with a few tips to help you get there.

French Press

French press is one of the most accessible ways to make a great cup. The immersion method draws out more body and oils than paper-filter brewing, which gives it a rich, round character. Good for people who prefer their coffee with a bit more weight to it.

Drip

A well-dialled drip brewer is hard to beat for reliability. Good for larger volumes and for households where the machine earns its counter space every morning. The key is using a good grind size and fresh beans — the machine does the rest.

Aeropress

The Aeropress is forgiving, portable, and surprisingly capable of producing an excellent cup. It brews quickly under gentle pressure, which gives the coffee a smooth, full-bodied character. A good option if you want something a bit more robust without pulling out an espresso machine.

Pour Over

Pour over is one of the most rewarding ways to brew. It's hands-on enough to feel intentional and forgiving enough to learn quickly. Great for showcasing the nuances of single origin coffees.
